Nourishing Green Soup
HEALTHY GREEN SOUP
Ok Ok, you know that green smoothie which looks so green but tastes gross. This is NOT the case here, don’t let the colour fool you - this soup is so so delicious! One of my favourite soups to make as not only is it soo healthy, packed full of greens and nutrients but it tastes AH-MAZING! Bonus: there are only 8 ingredients and it is so simple to make!
INGREDIENTS
1 leek
1 brown onion
2 large broccoli heads
1 medium bunch of kale (leaves not stalks)
4 cups spinach
1 cup frozen peas
4 cups vegetable stock
1 can coconut cream
DIRECTIONS
Sauté leek and onion in a little water or oil on medium heat until soft.
Add in broccoli, stock, coconut cream, let it come to a gentle simmer.
Next add in kale, spinach and peas.
Let simmer until broccoli is tender, about 10 minutes.
Turn off heat, the blend using an immersion blender or regular blender.
Top with some nutritional yeast and cashew cream.
This recipe serves 4 generously, I like freezing some for future or keep in the fridge for up to 5 days.
