Green Goddess Pesto Pizza
EASY VEGAN PIZZA
This Pesto, grilled Zucchini and Cashew Cheese Pizza is so delicious, made with the best store bough pesto (@naked.byron.foods ) you can find, it’s 100% natural and vegan. The cheesy flavour makes this pizza taste so flavourful.
Pizzas are the perfect meal to cook when having friends over - and this pizza is the perfect combo of flavours.
INGREDIENTS
Pizza Base
Naked Byron Foods Cheesey Pesto
1 Zucchini (ribboned and grilled)
Cashew cheese (store bought, or recipe below)
2 cups rocket
Juice of 1/2 lemon
1 tsp Olive oil
Salt and pepper
Cashew cheese:
1 cup soaked cashews
Juice 1/2 lemon
1 tsp apple cider vinegar
1 tsp sea salt
DIRECTIONS
Pre heat oven to 200C/390F.
For the Cashew Cheese - blend all ingredients, with a little water until smooth - add more water if you need it to blend smooth. Add more salt to taste.
Spread a generous layer of the pesto on to the pizza base.
Top with the grilled zucchini and dollops of cashew cheese.
Bake in oven for 15-20 minutes, or until base is cooked.
Prepare the rocket, by adding to olive oil, juice of 1/2 a lemon, spring of salt and pepper. Mix to combine. Top the pizza with a few more dollops of cashew cheese and pesto, this is optional but just add more flavour and deliciousness. Top with the lemony rocket. Slice up and enjoy!
