Creamy Hemp Alfredo
HEALTHIER VEGAN ALFREDO
This pasta sauce is a staple. A sauce that I keep in my fridge at all times, so you can be ready to make the ultimate creamy pasta at all times!
Using hemp seeds, this sauce is so nutrient dense filled with all the omegas, protein and healthy fats. It’s a lot lighter than the traditional Alfredo sauce.
I love keeping this simple with simply some rocket and a squeeze of lemon, or adding mushrooms, kale or broccoli.
INGREDIENTS
1/2 cup cashews, soaked for 10-60 minutes
3/4 cup hemp seeds
1/4 cup nutritional yeast
1 tsp lemon zest
1 tbsp apple cider vinegar
Juice 1 lemon (approx. 3 tbsp)
1 tsp sea salt
1/2 - 3/4 cup almond milk (or any unsweetened plant based milk)
Linguine (or your choice of pasta)
Fresh herbs (Parsley, Dill, Basil)
Fresh rocket, black pepper and hemp parmesan to serve)
DIRECTIONS
Place all ingredients into a high speed blender (start with 1.2 cup plant milk), blend until smooth adding more milk until smooth.
Cook pasta to packet instructions.
Drizzle a little extra virgin olive or hemp oil over the pasta. Pour over sauce and mix well. Add in chopped fresh herbs.
Serve with some cracked black pepper, squeeze of lemon, fresh rocket and hemp Parmesan.
