Chocolate Power Bars

HEALTHY SNACKING

These are somewhere between a granola bar, a brownie and a bliss ball. They are so tasty, and filled with so much goodness, they really will give you that power you need to tackle the rest of your day.
Filled with so many healthy fats, protein and carbs - they are simply the perfect snack! Oh and did I mention chocolate - well, need I say more?


INGREDIENTS

3 cups oats
1/3 cup maple
4 tbsp coconut oil (slightly solid)
1 cup mixed nuts (Almond, brazil and cashew) + 1/2 cup roughly chopped
1 cup medjool dates
1/2 cup almond butter (or any nut butter)
1/2 cup cacao powder
1/2 tsp sea salt
1 cup Power bites (halved)
1/3 cup chocolate chips

1/2 cup (100g) chocolate chips
1 tbsp coconut oil


DIRECTIONS

Add the oats, maple, coconut oil, 1 cup of the mixed nuts, medjool dates, almond butter, cacao powder and salt to a food processor and pulse until combined and the mixture sticks together with your fingers. Transfer to a large mixing bowl, add in the roughly chopped nuts, power bites and chocolate chips.
Fold to combine.
Line a baking tray with parchment paper, add in your mixture and press down with your hands to form an even layer.
Place in the fridge to cool for at least 2 hours or freezer for 30-40 minutes.
Melt the chocolate and coconut oil together in a heatproof bowl on top of a pot of simmering water(double boiler method) or in the microwave.
Slice the bars into squares or rectangles, then place on top a cooling rack and drizzle over the chocolate. Place back into the fridge for 10 minutes so the chocolate hardens then enjoy!!
Store in an airtight container in the fridge.
