Chocolate Mousse Pie


INGREDIENTS

Base;
1 1/2 cup almonds
1/2 cup desiccated coconut
1 cup medjool dates
3 tbsp cacao
1/4 tsp sea salt

Mousse;
2 medium sized avocado
1 cup coconut cream
1/2 cup coconut yoghurt
1/3 cup cacao or cocoa
1/2 cup maple
1/2 tsp vanilla paste
1/2 tsp sea salt


DIRECTIONS

Place the almonds into the food processor and pulse a few times to break down. Add in the rest of ingredients and pulse until it stick together with your fingers.
Spread a little coconut oil into a tart/pie pan. Press the base down with your hands, and finish off with the back of a spoon to ensure even layer.
Place into the freezer whilst you make your filling.
Place all the filling ingredients into a high speed blender or food processor and blend until smooth. Taste test, add more sweet if desired.
Pour filling into base into an even layer. Place in the freezer for 2 hours or in the fridge overnight.
