Hemp Seed Tabouleh

What is Tabouleh

Tabouleh is a fresh and healthy Middle Eastern salad that is perfect for the summer. Made with parsley, mint, tomatoes, and bulgur wheat, it is a refreshing and filling dish that can be served as a side or a main. Traditionally it uses bulgur wheat but here I’ve changed it up a little and used hemp seeds instead.

Hemp seeds are packed full of so many amazing nutrients - high in protein, omegas 3,6 + 9. This salad is packed with nutrients, including fiber, vitamins, and antioxidants, making it a great addition to any diet.

Serve it with some hummus, falafels and pita breads for a little Mezze board - or it is a great as a side salad or to bring a long to your next summer BBQ.


INGREDIENTS

3/4 cup hemp seeds
3 large tomatoes
1/2 english cucumber
1 brown onion, 
1 cup mint leaves
3 bunches parsley
1/2 cup lemon juice (3 lemons)
1/3 cup extra virgin olive oil
1 tbsp lemon zest, 1 lemon
1 tsp sea salt
Black pepper


DIRECTIONS

Dice the onion, tomato and cucumber into small cubes. Chop the herbs up fine.
Combine all the ingredients into a bowl and mix well to combine.
Taste test and add more salt or lemon if needed.
Serve with some hummus, corn chips or pita breads, or simply eat as is. Perfect to bring to a bbq.
