Creamy Hemp Vegetable Soup

I am the biggest fan of the humble hemp seed. I use them everyday in pretty much all forms of cooking. I garnish my avocado toast with them, add them to smoothie and like here have made a creamy cheesey vegetable soup with them. When you blend them up they create such a creamy texture. INGREDIENTS

1 brown onion, diced
2 garlic cloves, minced
1/2 tsp dried thyme
1/4 tsp smoked paprika
1 celery stalk, diced
1 carrot, diced
4 medium potatoes 300g, diced
1 sweet potato, diced
1 Broccoli, cut into florets
4 cups Veggie stock
1/4 cup nutritional yeast
1/2 cup hemp seeds 
1/2 tsp sea salt
1 cup frozen peas
1 cup kale, chopped


DIRECTIONS

Bring a large pot over medium heat with a drizzle of oil. Add in onion, garlic, herbs, carrot and celery and let sauté for 5-10 minutes until softened. Next add potatoes, sweet potatoes, broccoli and vegetable stock and bring to a simmer for about 10-15 minutes or until potatoes are fork tender.

Whilst the soup is simmering, add hemp seeds and 3/4 cups water  to a blender and blend until smooth then add 1 cup of the soup (try to get mostly vegetables in and less stock), nutritional yeast and salt and blend until smooth. Pour this back into the soup and stir to combine. Add in peas and kale and stir to combine, let this simmer for a further 5 minutes until kale has wilted slightly.

Serve with some hemp parmesan and fresh dill or basil.
