Hot Cross Bun Baked Oats
QUICK & EASY GRANOLA
I am so obsessed with granola, but usually when I crave it I'm too hungry to wait an hour for it to bake - and I'm not that organised to prep for the next day. So, this STOVE TOP (I know!) granola is so perfect if you are like me and a little impatient hehe.
it takes 15 minutes (well 20-25 including cool time but ya know, it's still quick!), and so easy to make!
It is also GRAIN FREE & OIL FREE!!
INGREDIENTS
1.5 cups oats
3/4 cups plant based milk
1/3 cup coconut yoghurt
1/4 cup maple
1 tbsp ground flax
1/3 cup dried fruit
1 tsp baking powder
1/2 tsp cinnamon
1 tsp vanilla
1/4 tsp cloves
1/4 tsp nutmeg
1/2 tsp sea salt
1 tsp orange juice
1 tsp orange zest
Icing
1 tbsp coconut butter
DIRECTIONS
Preheat oven to 180C/375F.
Mix together all the dry ingredients into a large mixing bowl. Add in all the wet ingredients and stir to combine. Next, add in the dried fruit and stir to combine.
Transfer to a square baking dish (approximately 8" by 8"). Bake in the oven for 40-45 minutes or until golden and cooked through.
Score with a knife your desired squares. Then either using a teaspoon or a piping bag start making your crosses with the coconut butter (if the oats are still piping hot the coconut butter may drizzle a little, if you want more defined crosses wait until the oats are at room temp.)
Best served with some coconut yoghurt and a drizzle of maple syrup.
