Grain-free Choc Cherry Granola
INGREDIENTS
1 cup activated buckwheat grouts
1 cup puffed rice or quinoa
1 cup chopped nuts (here I used almonds and cashews, but hazelnuts, walnuts and pecans would be great too)
1/4 cup cacao
2 tbsp coconut sugar
1 tsp sea salt
1/2 cup maple syrup
2 tbsp coconut oil
1/2 cup dried cherries
DIRECTIONS
Pre-heat oven to 150C. Line a large baking dish with parchment paper.
Place all dry ingredients except cherries into a large mixing bowl and mix well.
Melt coconut oil in a small pan on low heat and mix in the maple syrup.
Combine the wet ingredients into the dry ingredients and mix well until combined.
Spread the granola in an even layer on the baking dish.
Bake in the oven for 35-40 minutes. Checking half way and giving it a stir in the dish.
Allow too cool to room temperature before adding the cherries and serving.
Store in an airtight container.
