Spiced Chocolate Chip Cookies

GLUTEN FREE COOKIES

These cookies are a delicious healthy alternative to your regular cookie.

Using warming spices like clove, ginger and cinnamon make these cookies a comforting, tasty sweet treat! On a plus side, they make your house smell so good!


INGREDIENTS

1 flax egg (1 tbsp flax powder & 2.5tbsp water)
1/2 cup almond butter
1/4 cup coconut oil, melted
1/2 cup maple
2 tsp vanilla
1 3/4 cup almond flour
1/2 tsp baking soda
1/2 tsp ginger
1/4 tsp clove
1/4 tsp nutmeg
1/2 tsp cinnamon
150g dark chocolate, cut into chucks


DIRECTIONS

Pre-heat oven to 175C.
Prepare the flax egg and set it aside.
Combine the almond butter, coconut oil, maple syrup, vanilla and whisk until smooth. Add in the flax egg and stir until combined. 
Next add in the almond flour, baking soda, spices and fold until combined. Add in chocolate chips (save a few to top at the end). Chill in the fridge for 30-60 minutes (or overnight)
Scoop out the mixture using a cookie scoop or heaped tbsp onto a lined baking tray. Leave space between each cookie and don’t flatten out too much as they will spread a little while baking. Top with a few extra chocolate chunks.
Bake in the oven for 10-12 minutes.
Allow to cool for 10-15 minutes. Sprinkle on some flakey sea salt and enjoy!
