Avo, Pea + Mint Smash


INGREDIENTS

1/2 cup peas
1/2 avocado
1/4 cup Mint (loosely packed)
1/4 cup Parsley (loosely packed)
1 tbsp Dill
Juice 1/2 lemon
1/2 tsp sea salt
Sourdough bread


DIRECTIONS

Cook the peas to packet instructions.
Mash the avocado with a fork, add the peas and mash a little leaving some whole. Chop herbs up small and add in to bowl with lemon and salt. Mix well, then adjust to taste with salt and lemon.
Serve on toasted Sourdough, with some fresh sprouts, vegan feta and cracked black pepper.
