Cashew Hemp Chocolate Eggs

HEALTHY EASTER EGGS

These are the most perfect easter treat! Filled with amazing healthy fats, omega 3,6 &9 and protein - they are sure to satisfy your sweet tooth and leave you feeling good! I absolutely love using the Hemp Foods Australia Natural protein here as it doesn’t have a strong taste, just a very subtle sweetness.

INGREDIENTS

3/4 cup cashew butter (you can sub this for almond or peanut if you prefer)
3 tbsp maple syrup
1/2 tsp vanilla paste
1/4 cup natural flavoured Protein*
2 tbsp almond or coconut flour
1/2 tsp sea salt
1/4 cup hemp seeds 

150g dark chocolate
1/2 tbsp coconut oil

** If you use a flavoured protein powder it will change the taste of your bars. I use this unflavoured one.


DIRECTIONS

Mix together the cashew butter, maple and vanilla into a mixing bowl. Add in the rest of the ingredients and stir well until combined, the mix will be a little sticky.

With a tablespoon, roll out mixture into balls then place on parchment paper and press into egg shapes. Place into the freezer for 30 minutes to harden.

Melt chocolate and coconut oil together in a bowl in the microwave or over a simmering pot of water.

Dip the eggs into the chocolate using a fork, and leave to set on parchment paper. I like to drizzle some with chocolate, or dip only half the eggs in. Set in the fridge, then drizzle over a little more chocolate and top with some flakey sea salt and hemp seeds.

Store in a sealed container in the fridge for up to 5-7 days or in the freezer for 6 months.
