Pesto Pasta

WHOLE FOOD VEGAN PESTO

Pesto is one of my favourite things to make, I mean isn’t basil just the best smell!!??

I also love making it because I can make it a little healthier than the usual store bought ones. Usually you will find a tonne of oil and cheese in store bought ones.

Here I’ve added avocado and hemp seeds, also some kale but this is totally optional.


INGREDIENTS

3 cups basil
1 cup mint
1/4 cup dill
1 cup kale (blanched)
4 spring onions (green part)
1 cup walnuts
1/4 cup hemp seeds
1/4 cup nutritional yeast
1/2 avocado
Zest 1 lemon
Juice 1 lemon
1-2 tbsp EVOO
1/4 cup water


DIRECTIONS

Place all ingredients into a food processor/high speed blender except water, process then gradually add water until it’s reached the consistency you want.
Cook pasta to packet instructions. Mix in the pesto, add some olives and fresh greens.
When storing it in a jar I like to top it with a little olive oil to stop it browning/ it will keep longer.
