Smokey Beans on Toast


INGREDIENTS

1/2 brown onion
1 1/2 tsp smoked paprika
1/2 tsp chilli flakes (optional)
1 tsp tomato paste
1 cup tomato purée
1 x 400g can of chickpeas
1 x 400g can on cannelloni beans
1/2 tsp sea salt

Cashew Cream;
1 cup cashews (soaked for min. 30 minutes)
Juice 1 lemon
1 tsp sea salt
1 tsp apple cider vinegar
1 tbsp nutritional yeast


DIRECTIONS

Dice the onion into thin strips. Heat 1 tbsp oil in a pan on medium high heat, once hot add the onion and a pinch of salt. Sautee the onions for 5-8 minutes or until caramelised.
Add in spices, tomato paste and tomato puree and let simmer on medium heat for 5 minutes. Add in beans and bring to a simmer.
For the Cashew Cream, add everything into a high speed blender along with a couple tbsp of water and blend of high until smooth, adding more water if needed.
Then serve on some toasted sourdough, and drizzle some cashew cream over top and top with some sprouts and fresh herbs.
